I can definitely eat some camembert from time to time (oooh, with roasted garlic). Sadly, the cheese thing I ate yesterday wasn't the kind that's supposed to be stinky. But I've lived to tell the tale. &lt;br&gt;&lt;br&gt;My favorite, favorite, favorite right now is manchego. Oh how I love it. I made some crostini last weekend with some saffron olive oil and some fleur de sel and put a little petite basque on top. Only thing that would have made it better is some chutney or something else sweet. Oh, that cheese is some good stuff. Ouch, my stomach hurts just thinking about it. My neighbour &amp;amp; I take delight (in a competitive way) in producing the stinkiest Camemberts when we go to each others houses for dinner.  Think of it as maturing, like a good wine.  &lt;br&gt;&lt;br&gt;Of course some cheeses you don't want stinky.  Edam would be one.
