You most likely won't upgrade to SQL 2005 exclusively for end user performance reasons. There are some interesting performance tests here...
Here’s my top 5 and beyond in relation to Operating a SharePoint Products & Technologies (2003-2007) environment
The mentions are anecdotal from IT experience and may vary based on the size and scale of your farm.
1. Backup is faster (sometimes 2x) and support for partial recovery (Don't ignore SQL Litespeed if you need even faster backups)
2. Support for Database Mirroring in 2007 (I’ve heard great things from Steve Tullis)
3. WSS v2 (SQLFTS - MSSearch.exe) Indexing is faster (up to 3x or more)
4. Upgrade is faster (up to 2X) (talk to Andre Heymann)
5. Manages Memory better (especially with x64)
