Catching up on posts, and saw that Bryant Likes (over at my former company, Avanade) had picked up on an easy way to tell Vista to use multiple cores even through the boot cycle (for edge cases, it only uses one until it gets things up an rolling.)  He points over to Peter Provost who walks through the steps in this post, but then Bryant goes on to prove it works on Windows Server 2008 as well.  Off to see how well it works on my systems!
