With the upcoming launch of Windows Server 2008 you'll start to see more resources related to SharePoint deployments on Windows Server 2008.

First to note is since RC0 of WS08, you need to have WSS service pack 1, and as applicable MOSS SP1.
To run Windows SharePoint Services 3.0 for a fresh installation after installing Windows Server 2008, install Windows SharePoint Services 3.0 x86 with SP1 (32-bit) or Windows SharePoint Services 3.0 x64 with SP1
Also there is a new blog case study article on AMD's Developer Central site deployed on SharePoint Server 2007 on Windows Server 2008, recently published on the SharePoint team blog.
You'll find a couple of references on TechNet related to deployment on Windows Server 2008 updated since RC0.
WSS 3.0
MOSS 2007
We're working on releasing a similar "slipstream" version of SharePoint Server SP1 which will include both the full version of WSS the WSS SP1 patch, SharePoint Server 2007 full version including the SP1. The installation will automatically include the service pack. In the mean time I recommend you look at Ben Curry's (SharePoint MVP) post on installing SharePoint Server 2007 on RC1 (instructions include how to put SP1 in the update). You'll hear about the download here when it's available. Martin Kearn has some similar instructions for including the WSS SP1 and MOSS SP1 when installing on Windows Server 2008. Note, when installing SharePoint Server 2007 on Windows Server 2008 it does require both WSS SP1 and MOSS SP1 be included when you install.
Upgrading from Windows Server 2003 to Windows Server 2008
After release you'll see more instructions on this topic on TechNet. We don't recommend you upgrade production environments until after the Windows Server 2008 release. We announced that this release was the last 32-bit version of SharePoint Products and Technologies at Tech Ed IT Forum 2007. I was exited to hear Steve Smith (SharePoint MVP) and Penny Coventry (SharePoint MVP) both of Combined Knowledge, have just released a paper on How to move a SharePoint Server 2007 32-bit environment to a 64-bit environment on Windows Server 2008. What a great document to get familiar with and to start including this in your plans.

SQL 2008 and SharePoint Deployments
The SQL 2008 team and the SharePoint Team are working together to make both products better and to ensure a better together experience. We currently plan to support SQL 2008 at its release. Expect to hear more about this as well. We don't recommend running production SharePoint environments on SQL 2008 with pre-release (CTP) builds.
.NET Framework
.NET Framework 2.0 SP1, .NET Framework 3.0 SP1 and .NET Framework 3.5 all now supported. If you plan to run .NET Framework 3.5, we recommend you run WSS 3.0 SP1 or MOSS 2007 SP1 as applicable for the best experience.

Hello All,
Till Microsoft comesup with MOSS installation with SP1 if you need to install MOSS on server 2008 you need to extract the exe's of WSS 3.0 SP1 and MOSS SP1 to updates folder of MOSS installation files and then try installing the one it will work like normal.
Hope this helps till MOSS with SP1 becomes available.

I have been spending a lot of time over the past few months rebuilding my knowledge with SharePoint.
I'm looking for details about how MOSS 2007 will work with SQL Server 2008 with respect to peer-to-peer. This was something that you couldn't do with 2005 but all the marketing fluff I've been able to find (which isn't much) says this will be a "KEY" item for integration with MOSS/WSSv3.
