One obscure thing that you can do with Virtual PC is to configure it to support software RAID and Mirror implementations While this is rather pointless from a practical perspective (as you are not actually gaining any performance or redundancy) - it useful from an educational point of view for people who wish to familiarize themselves with these technologies - and the process of recovering from a disk failure.
As you can see in the screenshots below - I had configured a virtual machine with both a mirrored boot disk and a RAID-5 secondary volume. I then removed the second virtual hard disk, replaced it with a new disk and recovered the data:
While this was interesting to do in a virtual machine - I was much happier to be doing it there than having to try this out on a physical computer with valuable data on it :-)
