The boot.wim on the DVD was not updated to build 6.1.7000 yet, therefore it lacks the native support to install to a .VHD like Windows 7 and Server 2008 R2 have.
To install Hyper-V R2 on a .VHD you should boot from the full Server 2008 R2 DVD, then replace it by the Hyper-V Server R2 DVD after loading of the ramdisk .
Thereafter apply the same procedure as with Windows 7 and Server 2008 2.
Press Shift-F10 and run DISKPART to create and attach the vdisk, return to the installer and select the unassigned space as the target. The boot manager will have the option for Hyper-V Server R2 besides the previously existing options.
