As opposed to capacity planning for future deployments, do you have any resource or suggestions that can be utilized for determine capacity and performance on existing farms?

Start with the MOM Packs if you have Operations Manager. In addition, I have encouraged partners around the reporting space. The spsreports tool has been updated for 2007 and is on codeplex. The SQL reporting services pack could be updated to work, but I haven't heard of anyone doing that yet.
As far as performance goes, I do recommend using the counters and establishing baselines and supplementing this with your Operations Management Monitoring environment for growth and capacity.
If any new reporting packs come out I'll definitely post them here.
