Master of Orion under Virtual PC
Master of Orion is by far the greatest space strategy game ever. This game has everything. You command you race as you explore the universe, colonize new planets, research new technology, construct massive space ship fleets, meet, negotiate, spy on and destroy other races. This game rocks. One of my favorite aspects of Master of Orion is the 'ship builder' where you get to design the ships that will make up your fleet from scratch. I also love the variety of the different races you can play - do you want to be immune to hostile environments, or do you want to have superior research skills?
Best of all this classic runs well (albeit a little jerkily at times) under Virtual PC with the default settings:
