Why is this only available to MSDN subscribers? I am sure the version released for beta 2 of FX2/VS 2005 was available to anyone who was interested?

That version was only available to MSDN subscribers (and probably PDC attendees) as well.

How can I uninstall WinFS?

After I had installed original WinFS Beta1, it does not show up either in "Windows Components", or in "Change or Remove Programs".

I reinstalled WinFS Beta1 Refresh (with no complaints), but it did not help either. You just can't get rid of it.
WinFS itself works, but I see no way to uninstall it.
Any ideas?

You can uninstall from Add/Remove Programs (specifically "Change or Remove Programs"). Look from the entry with "Microsoft WinFS" in the title.

There are no plans to re-release Beta 1 on 64 bit. We're actively evaluating which platforms will be supported for Beta 2.

On my system it is SLOOOOW.

It uses about 20% of my CPU.
